It might as well be death. Ask any Hollow who bothers to think about it. Oh, the shinigami talk about "purifying" and "sending on" and "the cycle of reincarnation", but you don't see them hurrying along to their theoretical next life, do you?
No, it's killing. Be honest about it. The loss of everything you know, everything you are -- what is that except death? Something may live again, but it won't be you as you are now.
At least we only do it because we're hungry.
